Potatoes from the vegetable garden, dandelions from the fields and bacon from the farm pig… All these ingredients from Ardennes local heritage, every family, even poor, could easily dispose of it. This is no doubt why the bacon salad has become a emblematic dish of the Ardennes region. Today, we find it during festivities organized with the Brotherhood of Bacon Salad who has represented her since 2001.
Easy to make
This complete dish is easy to make. Just choose good potatoes with firm flesh, very fresh pichalits (or escarole or frisee) and add a drizzle of cider or raspberry vinegar at the end of cooking. Below, the Bacon Salad Brotherhood explains everything.
The recipe
- Boil the potatoes in water.
- In a cast iron casserole, brown the fatty bacon.
- Remove the cretons (small pieces of fried bacon) when they are golden brown without discarding the fat.
- Fry the pieces of lean bacon in this fat.
- Remove them once they are golden.
- Deglaze with vinegar.
- Add fatty bacon, lean bacon and the potatoes, mix everything together.
- Add the salad.
- Stir it all up, it's ready
