By the fire in winter, forest inns will serve you "bayenne", a subtle mix of herbs and potatoes burnt slightly on the bottom of a cast-iron pan. Then you find yourself embarking on a discussion, as lengthy as it is mouthwatering, with your hostess on the thousand different ways to prepare a bacon salad.

In summer, the restaurants in the Ardennes bocage countryside will seat you under an oak tree and offer you French Ardennes ham, as rich in flavour as it is rich in recipes. At farmhouses, you will be welcomed with a traditional bowl of cider and a galette au sucre. And don't miss out on the ordinary bistrots in towns and villages where, over a tankard of beer brewed on the premises, the locals will tell you all about the region and the stories of the men who built it.
